You know my favorite thing about this meal? Is that you put in a casserole dish, bake it, and then it’s ready to serve. I love a good “no muss, no fuss” recipe as my Grandma would say.
This is one of those highly versatile recipes that can easily grace a table when family is coming, or just a weekday night.
The recipe you reach for when you hear at the last minute, “Oh honey, so and so is coming for dinner!” Your new tried & true, go-to hospitality meal.
What is Baked Parmesan Crusted Chicken Made Of?
This delightful chicken dish is made of: boneless, skinless chicken breasts, mayonnaise, shredded parmesan cheese (fresh grated tastes the best), seasoning salt (this is my favorite – I used it for everything!), black pepper, and garlic powder.
Simple, readily available ingredients makes this recipe a perfect choice for potluck dinners, or even that mad dash at 4pm when you don’t have a clue what you are making for dinner.
Side note: You can use bone-in chicken pieces. You will just need to adjust your cooking time to allow for the extra weight. As always with chicken, check with a thermometer to make sure you have reached that safe internal temperature of 165 degrees Fahrenheit.
Recipe for Parmesan Crusted Chicken
Ingredients:
- Boneless Skinless Chicken Breasts, cut into halves or thirds (depending on the size)
- Parmesan Cheese (freshly shredded tastes best)
- Mayonnaise (use homemade if you have it, recipe here)
- Plain Bread Crumbs
- Garlic Powder
- Black Pepper
- Seasoning Salt ( Weaver’s Farm Dust is my go to)
- Whole Milk or Buttermilk to pre-soak chicken
Tools:
- 9 inch by 13 inch baking dish
- knife
- mixing spoon
- large bowl
- measuring cups and spoons
- oven
Directions:
- Start by cutting each chicken breast into halves or thirds (depending on size) length-wise to create tender or strip size.
- Place chicken breast pieces into a bowl of milk or buttermilk, to soak for 30 minutes.
- Preheat your oven to 375 degrees Fahrenheit.
- Mix together: Seasonings, 1/2 cup of Parmesan cheese, and mayonnaise in a small bowl.
- Put chicken pieces into baking dish (9 x 13) and slather on mixture and sprinkle with remaining parmesan cheese.
- Bake in a 375 degree Fahrenheit oven for 40 to 45 minutes, until internal temp reaches 160 degrees Fahrenheit.
- Let rest for 5 minutes before serving.
What Goes Well With Parmesan Chicken?
The wonderful thing about chicken is that almost any side dish goes well with it! A side salad and biscuits. Or baked beans and coleslaw! Mac and cheese and cornbread. Any roasted veggie and fresh baked bread. You can make the meal as simple or as fussy as you like.
Maybe some mashed potatoes and gravy with a side of applesauce. Just about any side dish your family loves will go perfectly with this meal.
Helpful Hints
Don’t be afraid to make a double batch and put one in the freezer for another time. That batch cooking will save you time in the long run.
Always make sure to check your chicken with an internal thermometer to make sure it has reached a safe temperature of 165 degrees Fahrenheit.
I used boneless skinless chicken breast for this recipe, and cut them in half or thirds vertically. I believe you could also use bone-in chicken parts. You would just need to adjust cooking time to make sure they are cooked thoroughly.
Feel free to use any type of Parmesan cheese you can find. I will tell you freshly shredded Parmesan does really set this dish apart.
You can easily use up Homemade Mayonnaise here. Or you can use your favorite store bough brand. If I don’t make my own, my go-to brands are Duke’s and Sir Kensington’s.
You can also tweak this recipe to make it your own. Change up the type of cheese, if you like. Add in a different seasoning or sauce. I’m dying to try some buffalo sauce with this dish.
Don’t stop there! You can even slice up, chop up, or shred this chicken and make sandwiches! Add your favorite toppings like lettuce and tomato, maybe some bacon and you have a delicious leftover lunch that doesn’t taste like leftovers.
We have a favorite style of sandwich from back home (I may need to write a post on that recipe too) that would be delicious with this chicken. All I will say is the sandwich includes coleslaw and fries. If you know, you know.
Ooh another way you could use up leftovers of this chicken it to chop it up and add to a salad! Or in a pita sandwich. Or on a pizza even! Really there is no limit to what kind of meal you can make with this recipe.
Storage: Be sure to store leftovers in an airtight container to prevent the chicken from drying out in the refrigerator. Or in a freezer safe container if you plan to freeze an extra batch.
Hospitality: To make this Baked Parmesan Crusted Chicken even easier as a hospitality meal, make a batch for the freezer uncooked and in a baking pan (those throw away tin ones work well).
Then you can pop it right in the oven when company calls. Making it this way rather than baking ahead of time and then freezing it, gives you a fresh tasting meal rather than risking a dried out freezer taste.
To complete the meal, keep some frozen or canned veggies on hand, and maybe even some biscuits. (You could freeze the biscuits prepared but not baked to make for a quick, put together meal as well.)
The result is a lovely homecooked meal that your friends will be asking for a copy of the recipe.
